Flex Apps + Security

hi there,

currently i'm not flex developer (yet), though want be. have questions before commiting development platform. if pro's don't mind, i'd appreciate feedback.

first i'll describe i'd do. put i'd build app runs locally (either using browser or standalone client) hits database server across internet. can see of data, if not (at times), being sensitive information. in mind i'd feedback on following questions:

security
1) think ria's way go being i've never developed 1 i'm concerned security. how flex 2 manage security?
2) information @ point exposed plain text?
3) how can make sure data passed securely?

moving data
1) let's internet connection down short period of time. can flex cache data locally or keep in disconnected dataset or submission when internet connection online?
2) build actionscript or needs developed on own?

coding , design
1) while there flex builder windows i'm currenlty on mac. read there beta coming out later year (yay!) in mean time how hard write code hand in text editor such textmate (which, believe, has syntax highlighting , code-snippets actionscript)?
2) how hard/easy customize controls , such in flex 2?

is there else should asking? need convince partner in crime flex 2 right choice type of application. (he's used developing desktop apps, fyi)
