Pulling lots of wire vs remote monitoring via wifi


hello, i'm looking advice on how set up. 

my situation:  have boat bridge electronics, steering , control located.  spend time while piloting boat.   i looking install many sensors below deck in various locations.  wiring them aggregate in engine room come conduit bridge.  pulling wire through conduit not easy. looking @ pulling 1 multiple strand wire (or 2 or thee) rather 12,24 or 36 individual paired strands. 

then thought... dumb,. why not run 1 or more arduinos connect wirelessly bridge rather pull wire. 

ideally want set statusboard allow me monitor sensor info on ipad.  i'm going have aggregate signals somewhere, process them , make available statusboard.   it nice sit on bridge lot of connecting, programming , testing rather dungeon engine room.   but pulling wire suck big time. 

just looking thoughts how approach it.

i don't know sort of environment boat in, radio network vulnerable interference devices around you. when you're out in middle of shouldn't problem, guess want thing keep working when you're moored , knows other radio sources in environment. if have means run cable, suggest ethernet cable way go. means have unlimited bandwidth available sensor readings or else want use - gives option use standard ethernet devices such web cams, digital entertainment systems , on. preferably keep power , data cables separate, if can achieve power , ethernet available have potential anything.
